Is there away to import just the assignments under a certain category? For example, I have a gradebook for English so when I import the assignments from google classroom it on brings over just the assignments I have listed as English not every assignment I have created in my classroom.

Currently no but it is something we would like to add. I don't know if this will work for you in the meantime but you can mark assignments as ungraded:
